What's Coming to Maize Road

The project has been in the works for a year. Building permits for the Maize Road lot surfaced in October 2025, on a pad that had once been earmarked for a second Slim Chickens. This week, the local food site Wichita By E.B. reported the restaurant should open sometime in mid-November. Firebirds has not posted a date of its own, but the company now has a Wichita-West location page live with the Maize Road address.

This is the chain's second restaurant in town. The first opened in 2013 at the Waterfront, 10096 E. 13th St. on the east side. Firebirds runs roughly 70 restaurants nationwide and leans hard on its scratch kitchen, which matters if you cook: prep, grill and saute stations at a place like this take real skill, and that experience travels.

The new spot lands on a busy retail stretch of west Wichita, close to Hobby Lobby and QuikTrip near 29th and Maize. That is an easy commute from Maize, Goddard and the neighborhoods along K-96.
