A Parking-Lot Pop-Up Lands on the East Side

Dave's Hot Chicken started as a parking-lot pop-up in Los Angeles in 2017 and has grown to nearly 300 locations. Until this month, Wichita diners had to drive to Olathe, Overland Park or Tulsa for it.

The Wichita store fills the former Blaze Pizza space at Greenwich Place, in a building it shares with Schlotzsky's. City permit filings reported by KSN in April put the remodel at about $550,000 in interior and exterior work. Local food site Wichita By E.B. reported the Oct. 9 grand opening and a south-side patio.

It joins a busy stretch of new east-side openings. The Cheesecake Factory opened at Bradley Fair on Sept. 29, and every new kitchen along Rock Road and Greenwich draws from the same pool of line cooks, cashiers and shift leads.

🏆 Who's Behind It, and What Comes Next

The restaurant is run by a family franchise group. Brothers Jason and John Hotchkiss and their brother-in-law Paul Gorman signed on in 2022 to develop Dave's restaurants in the San Antonio area. Paul's son Pierce Gorman is leading the Kansas push, and Hannah Gorman is overseeing restaurant operations, according to the chain's May announcement.

Wichita is the first stop, not the last. The same group has said it plans restaurants in Manhattan, Lawrence and Topeka, plus a second Wichita location on the west side. No west Wichita address or opening date has been published. When one is, a second round of hiring comes with it.

💼 What Hiring Looks Like Right Now

Here's the honest picture. Neither the franchise group nor the chain has announced how many people the Wichita restaurant employs or what it pays. The Dave's Hot Chicken careers page sends applicants to each franchise group's own hiring portal, and Wichita did not appear on that list as of Oct. 14.

That doesn't mean the door is shut. New restaurants often keep hiring in their first months. A counter-service kitchen like this one typically staffs team members on the register and the fryer line, prep cooks, shift leaders and a management team.

  • Ask in person. Go during a slow stretch, mid-afternoon on a weekday, and ask for a manager.
  • Get your resume ready. Even for counter roles, a short list of past food-service jobs and your availability helps.
  • Watch for postings. The west Wichita store will need a full crew of its own.
